Easy Gluten-Free Banana Bread
Have last-minute friends or family stopping over and have nothing sweet to serve them? Here is an easy and quick recipe for Gluten-Free Banana Bread. Only 7 ingredients and cooks in under an hour.
Set oven to 375F
Ingredients:
1 ½ cups Gluten-Free Flour
1 cup Sugar
2/3 cup Canola Oil
1 tsp Baking Soda
1 tsp Vanilla
2 eggs
3 Ripe Bananas (peeled and mashed)
Directions:
1. Using a stand-mixer or a hand-held mixer, mix all of the ingredients together except for the bananas and Gluten-Free flour until well blended.
2. Slowly incorporate the Gluten-Free flour into the mixing bowl and mix until uniform.
3. Stir in 3 ripe Bananas (you can peel and smash these before beginning) using a wooden spoon or hard plastic spoon.
4. Once combined (don’t over-mix) spray 4 mini loaf-pans with Pam (or equivalent).
5. Add mixture evenly to pans.
6. Bake at 375F for 42-43 minutes
Cool in pans on a wire rack when out of the oven.
