Almond Flour Cookies Gluten-Free

Makes: about 18 cookies

Ingredients

2 cups almond flour
¼ teaspoon baking soda
¼ teaspoon salt
⅓ cup coconut sugar (or brown sugar)
2 tablespoons melted coconut oil or butter
1 egg
1 teaspoon vanilla extract
Optional: ½ cup chocolate chips, chopped nuts, or dried fruits

Directions

1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. Mix dry ingredients: In a medium bowl, stir together almond flour, baking soda, salt, and sugar.
3. Add wet ingredients: Stir in the melted coconut oil, egg, and vanilla. Mix just until it comes together as a soft dough.
4. Fold in chocolate chips or add‑ins if using.
Scoop tablespoon‑sized portions onto the baking sheet, flattening them slightly with your fingers.
6. Bake 10–12 minutes, until edges are just golden.
7. Cool on the pan for a few minutes before transferring to a rack — they’ll firm up as they cool.

Notes

These cookies are soft, slightly chewy, and naturally gluten‑free thanks to the almond flour. They’re also easy to adjust — try adding a pinch of cinnamon, shredded coconut, or swapping the chocolate chips for chopped dates.
