Jack’s Gluten-Free Oatmeal-Craisin Cookies
This is a perfect example of an easy to make, sweet treat that unless someone told you, you’d have no idea that these cookies were Gluten-Free!
Ingredients:
2 sticks of softened butter
1 cup dark brown sugar
½ cup regular sugar
1 tsp baking soda
2 eggs
1 ½ tsp cinnamon
1 tsp vanilla
1 ½ cups Gluten-Free flour
4 cups Bob’s Gluten-Free Oatmeal
1 ¼ cups Craisins
Directions:
1. In a stand mixer or with a hand mixer, combine all the ingredients except for the flour
2. Once everything is combined, slowly add the Gluten-Free Flour: mix until uniform.
3. Remove from mixer, hand stir-in using a wooden spoon:
4 cups Bob’s Gluten-Free Oatmeal
1 ¼ cups Craisins
4. Using a spoon, portion out batter onto greased cookie sheet leaving space between them
Bake at 350F: for 12-13 minutes (as every oven is different keep an eye on them when the timer gets to around 10 minutes or so).
Depending upon the size you make them, this recipe yields approximately 75 cookies.
