Easy Lemon-Butter Rice
Rice is the perfect partner for fish because it acts as a “sponge” for all those delicious pan juices and lemon.
Step-by-Step Instructions
1. Rinse the Starch: Put 1 cup of long-grain white rice in a mesh strainer and rinse under cold water until the water runs clear.
2. The Ratio: Combine 1 cup of rice with 2 cups of water and a pinch of salt in a small pot.
3. The Simmer: Bring to a boil, then immediately turn the heat to its lowest setting.
4. Cover: Put a tight lid on and do not open it for 15 minutes.
5. Rest: Turn off the heat and let the pot sit (still covered!) for 5 minutes.
6. Fluff and Flavor: Stir in a small knob of butter and a squeeze of lemon juice before serving.
