Simple Gluten-Free Flourless Peanut Butter Cookies

Ingredients

  • 1 cup creamy peanut butter (natural or regular both work)
  • ¾ cup sugar (or ½ cup sugar + ¼ cup brown sugar for extra chewiness)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • Optional: a handful of chocolate chips or a sprinkle of coarse sea salt on top

Directions

  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Mix everything together in a bowl until smooth — peanut butter, sugar, egg, vanilla, and salt.
  • Scoop tablespoon-size balls onto the baking sheet.
  • Flatten slightly with a fork in a crisscross pattern.
  • Bake 8–10 minutes, just until the edges start to set.
  • Cool on the pan for a few minutes before moving to a rack — they’ll firm up as they cool.

Notes

No flour, no fuss — just rich, peanut‑buttery goodness that melts in your mouth. You can swap peanut butter for almond or sunflower seed butter if you need to go nut‑free. These keep well in a sealed container for several days, and the dough freezes beautifully too.
