Simple Gluten-Free Flourless Peanut Butter Cookies

Ingredients
- 1 cup creamy peanut butter (natural or regular both work)
- ¾ cup sugar (or ½ cup sugar + ¼ cup brown sugar for extra chewiness)
- 1 large egg
- 1 teaspoon vanilla extract
- ¼ teaspoon salt
- Optional: a handful of chocolate chips or a sprinkle of coarse sea salt on top
Directions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Mix everything together in a bowl until smooth — peanut butter, sugar, egg, vanilla, and salt.
- Scoop tablespoon-size balls onto the baking sheet.
- Flatten slightly with a fork in a crisscross pattern.
- Bake 8–10 minutes, just until the edges start to set.
- Cool on the pan for a few minutes before moving to a rack — they’ll firm up as they cool.
