One-Skillet Garlic Butter Chicken & Green Beans (Gluten-Free)

Equipment Needed:
• A large skillet (12-inch is perfect)
• Tongs
• A sharp knife and cutting board

Ingredients:
• Chicken: 1 lb chicken breast cutlets (thin-cut breasts work best here because they cook quickly and evenly).
• Veggie: 1/2 lb fresh green beans, ends trimmed.
• The Flavor Base: 3 tablespoons butter (divided), 1 tablespoon olive oil, and 4 cloves of garlic, minced.
• The Splash: 1/4 cup low-sodium chicken broth (or water) and a squeeze of fresh lemon juice.
• Seasonings: Salt, black pepper, and onion powder.

Step-by-Step Instructions:
1. Prep and Season
Pat the chicken breasts dry with a paper towel (this helps them get a nice golden crust instead of steaming). Season both sides generously with salt, pepper, and a little onion powder.
2. Sear the Chicken (Mastering Medium-High Heat)
Place your skillet over medium-high heat and add the olive oil and 1 tablespoon of the butter. Once the butter is melted and foaming, add the chicken. Cook for about 4–5 minutes on the first side without moving it, then flip and cook for another 4–5 minutes until the inside is no longer pink. Remove the chicken to a plate and cover it loosely with foil to rest.
3. Blister the Green Beans
Turn the heat down to medium. In the same pan (keep all those delicious brown chicken bits at the bottom!), toss in the green beans. Toss them around for about 4–5 minutes. You want them to turn bright green and get a little bit of a char, but still keep a nice, crisp snap. Move them to the plate with the chicken.
4. Create the Quick Pan Sauce (The Magic Step)
Turn the heat down to low. Add the remaining 2 tablespoons of butter and the minced garlic to the pan. Stir constantly for about 1 minute until you smell that incredible garlic aroma—don’t let it brown too much, or it will taste bitter!
Pour in the chicken broth and lemon juice, scraping up any stuck-on bits from the bottom of the pan. Let it bubble gently for 1 minute to thicken slightly.
5. Combine and Serve
Nestle the chicken and green beans back into the skillet, spooning that gorgeous garlic butter sauce right over the top. Let everything warm through for one minute, and you are ready to eat.

When sautéing garlic, always keep your heat on low and keep it moving. Garlic burns easily, but when done gently, it sweetens up and creates a rich, restaurant-quality sauce.
