Diabetic Friendly turkey sausage and cauliflower rice in a cast iron skillet

Smoky Lentil, Kale & Chicken Sausage Stew

A hearty, comforting rustic stew built around slow-digesting complex carbohydrates, lean protein, and leafy greens. Unlike refined starches that cause rapid blood sugar surges, brown lentils provide soluble fiber and resistant starch that release energy gradually and keep glucose levels stable.

Why It Fits a Diabetic Meal Plan

• High Soluble Fiber & Low GI: Brown lentils have a low glycemic index (GI ~32). Their high concentration of soluble fiber forms a gel-like substance in the digestive tract, slowing the absorption of glucose into the bloodstream.
• Balanced Macronutrient Buffer: Pairing whole legumes with lean poultry sausage and extra virgin olive oil provides the protein and healthy fat needed to flatten post-meal glucose spikes.
• Prebiotic Gut Support: The combination of alliums (onions, garlic) and legumes supports gut microbiome diversity, which plays a recognized role in improving overall insulin sensitivity.

Ingredients

  • 12 oz (340g) fully cooked smoked chicken or turkey sausage (look for varieties with zero added sugar or corn syrup), sliced into 1/4-inch rounds
  • 1 tbsp extra virgin olive oil
  • 1 medium yellow onion, diced
  • 2 medium carrots, scrubbed and diced into 1/2-inch coins
  • 2 stalks celery, sliced
  • 4 cloves garlic, minced
  • 1 cup (approx. 200g) dry brown or green lentils, rinsed and picked over for pebbles
  • 1 can (14.5 oz / 410g) diced tomatoes (no added salt), with their juices
  • 4 cups (1 quart / 950ml) low-sodium chicken broth (or vegetable broth)
  • 1 tsp smoked paprika (sweet or bittersweet)
  • 1/2 tsp dried thyme
  • 1 dried bay leaf
  • 3 cups lacinato kale (also called dinosaur or Tuscan kale), stems removed and leaves chopped into bite-sized ribbons
  • 1/2 tsp kosher salt (or to taste)
  • 1/4 tsp freshly ground black pepper
  • 1 tbsp apple cider vinegar or fresh lemon juice (added at the end to brighten the broth)

Step-by-Step Instructions
1. Brown the Sausage
Heat the olive oil in a heavy-bottomed Dutch oven or large soup pot over medium heat. Add the sliced chicken sausage and sear for 4–5 minutes, turning occasionally, until the edges develop a crisp, golden-brown crust. Transfer the sausage to a plate, leaving the flavored oil in the pot.
2. Sweat the Mirepoix (Aromatics)
Add the diced onion, carrots, and celery to the pot. Cook over medium heat for 5–6 minutes, stirring occasionally, until the onions turn translucent and the carrots begin to soften. Stir in the minced garlic and cook for another 45–60 seconds until fragrant.
3. Bloom the Spices
Stir in the smoked paprika, dried thyme, black pepper, and kosher salt. Coat the vegetables evenly and cook for 30 seconds to wake up the dried herbs and toast the paprika.
4. Simmer the Lentils
Pour in the rinsed lentils, canned diced tomatoes with their juice, low-sodium broth, and add the bay leaf. Use a wooden spoon to scrape up any browned bits stuck to the bottom of the pot (this adds deep flavor to the broth). Bring the liquid to a rolling boil, then immediately turn the heat to low, cover with a tight lid, and simmer gently for 25 minutes.
5. Add the Greens & Sausage
Remove the lid. Check a lentil for doneness; it should be tender through the center but still retain its disc shape, not mushy. Discard the bay leaf. Stir the browned sausage rounds and chopped kale ribbons into the pot. Let it simmer uncovered on low for 5–7 minutes until the kale is wilted and tender, and the sausage is hot.
6. Finish with Acid
Turn off the heat. Stir in the apple cider vinegar (or fresh lemon juice). Taste the broth and adjust with a small pinch of salt or pepper if needed. Ladle into warm bowls and serve.

  • Lentil Selection Matters: Use brown or French green (Puy) lentils. Avoid red or yellow split lentils for this recipe; red lentils break down into a smooth porridge within 15 minutes, whereas brown and green lentils retain their firm, satisfying bite in stews.
  • The Power of Acid: Never skip the splash of vinegar or lemon juice at the end. A touch of acidity balances the rich, earthy flavors of lentils and smoked sausage without needing extra salt.
  • Broth Adjustments for Storage: Lentils continue to absorb liquid as they cool. If reheating leftovers the next day, add a splash of water or broth to loosen the stew back up.
